Does anyone know how (if?) to prevent the quantity of the item from showing?

It's part of the interface so you'll probably have to change it in the xml files. I doubt the the DDS file of the icon has anything to do with it.

Icon Button?[edit source]
- Start the Construction Set and load your mod.
- Find your object and double-click on it.
- Click the Icon button and browse to the new .DDS icon and select it.
I'm not seeing any Icon button. I'm trying to change the icon for a spell.

DonAtreides, the icons mentioned in this tutorial are mainly for clothing, items, weapons and armor. Spell icons are universal and are based on the "type" of spell such as "Bound item", "Damage Health", "Drain Magicka", "Weakness to Fire" and "Fortify Skill." To modify any of these, you must create a "replacer" icon that will act like a global replacer for that type of spell. You cannot create a new and unique spell icon; must replace an existing one. For an example, search for a mod on TESNexus called "Spell Icon Replace" and it will show you the texture paths and filenames you'd need to replace.
