All of the advanced control sliders used in character gen are available here.

Basically, this screen shows you the sliders in numerical format whereas the Race Menu shows visual changes in realtime. Here is a breakdown of what you see on the tab:

Slider: Used to modify the value of whichever item is highlighted in the list.

Numeric Value: The actual numeric value of the item can be seen below the slider.

Control Type: Determines whether you are modifying the shape (geometry) or coloring (texture) of the face.

Symmetry Type: Determines whether both sides of the face are identical (Symmetry) or not (Asymmetry).

Clamp Values: If this box is checked, values do not adjust automatically when other values are modified. A clamp should be used if you are trying to reach precise values for each item. Doesn't always work too well.

Note: The texture feature here is apparently the same as the Tone selection on the Race Menu screen. Changes in texture on the Face Advanced tab do not appear to render in realtime at right.
